Hospitality Management Lecturer

Vicky Nguyen

Born in Vietnam and educated in Switzerland at the Swiss Hotel Management School, Vicky holds a Bachelor of Arts with honours in Hospitality Management and a Master of Arts in International Hospitality Management. She speaks Vietnamese (native), fluent English and intermediate French.

Her local work experience includes the Vietnam National Administration of Tourism in Ha Noi, where she was an Official in the International Cooperation Department. Vicky has also held a position of Lecturer at Bac Nam Vocational College in Hai Phong. Her international work experience includes three years in Switzerland at various Hospitality establishments in F&B Management.

Vicky joined CitySmart with the ambition to establish herself in the field of education, utilizing her skills and experience to help students to achieve high academic results.

Hospitality Management Lecturer

Vincent Quach

Born in Vietnam and educated in Switzerland at the University Centre “Cesar Ritz” (UCCR), Vincent completed an MBA in Hotel and Tourism Management (Swiss – CoFRU accredited) and a Post Graduate Diploma in Business Administration. In addition to this he holds a University Degree in Hospitality Management from the Swiss Hotel Management School in Switzerland and Hotel Management Certificates from the American Hotel & Lodging Association. Further accomplishments include his studies at Taylors College Auckland, New Zealand in Economics, Financial & Managerial Accounting and a Certificate in Upper/Intermediate Level English. Strategic Hospitality Operations and Management, International Travel, Tourism and Hospitality Sustainable Travel, Tourism and Hospitality Management and Company Economics level 01 & 2 which he completed at the College of Business Administration for Managers, Vatel Intl Hotel, Management School; Hoa Sen University and the Institute of International Education; NTT University.

His impressive work experience includes being an Associate Lecturer and Senior Lecturer and Internal Verifier. In Vietnam Vincent has worked at Cathay Pacific Airways in Ho Chi Minh City as an Airport Services Supervisor/ Duty Manager, where he was responsible for the Cathay Pacific operations at the Tan Son Nhat International airport. His experience in Front Office Management was gained at the Nguyen Du Park Villas; Boutique Serviced Apartments, in Ho Chi Minh City. His international experience includes Management Training at the Hyatt Regency Crown Center, USA, where he was responsible for supervising the convention & banquet department.  In Greece he completed an internship at Sani Resorts/ Sani Beach Hotel as the Front Office Clerk & Night Auditor. His banquet experience comes from Chinos L’orchide Restaurant at Hotel Alex in Switzerland. And he is currently a “Banquet Member” of the International Global Group; Auckland Tab Church, New Zealand.

Vincent is the proud Founder of Gold Life Fitness & Yoga Health & Fitness and as proven experience of managing the administration and operations of this club. He speaks three languages; Vietnamese, English & French (basics) and his passion for “causes” includes Children, Education and Social Services.

Culinary Arts Lecturer

Tony Trinh

Tony travelled from his home in Vietnam to Australia in order to further his education. He holds a Certificate ll in Hospitality Operations (Cookery) from the Box Hill Institute in Australia, including study in the Use of English Vocabulary in Hospitality industry.

His accolades include being the Head Chef Top Chef Restaurant Café & Bakery / Restaurant & Bar, Head Chef at The Le Vu JSC .Cielo13 Sky bar and Restaurant, Sous Chef at The Emeralda  Ninh Binh Resort, Head Chef at The Bistro Restaurant (Pegasus International Unicentre), Executive Chef at Life Heritage resort Ha Long bay and Sous Chef at Bleu de Thuy Restaurant.

He is trained in all aspects of Western and Vietnamese cuisine, Kitchen Management and training kitchen teams on preparing and cooking new and inspiring menus.

CULINARY ARTS LECTURER

Peter Lester

With over 20 years’ experience in the Food & Beverage industry, Chef Peter Lester is the former program manager of Culinary Arts program.

During his highly successful career Peter worked as the Executive Chef at many famous resorts, hotels and restaurants worldwide, namely Accor Australia Pacific Hotel, Iririki Island Resort and Spa in Vanuatu, and the South Pacific Resort in Norfolk Island. He has been involved in the planning and re-structuring of many developing Hospitality Businesses throughout his career, and therefore has a deep understanding of hospitality, culinary and service management

Peter built CHM’s Culinary Arts programs to ensure that they are suitable for students in Vietnam. He is passionate about his work and dedicated to his students; in turn, CHM’s students admire Peter as a talented chef, and use his great achievements to set their own personal career goals.

At CHM, Peter also manages the Executive Chef/ Operation Manager at the Top Chef Restaurant and Bar. For Vietnamese people he is widely known as a winning challenger of Iron Chef Vietnam 2012.

Hospitality Management Lecturer

Phuong Vu

Vietnamese national, Phuong, graduated from Swinburne University of Technology in Australia with a Master of International Accounting. This is in addition to her qualifications from Hanoi University of Finance and Accounting with a degree in Bachelor in Accounting and a degree in Bachelor in English from Hanoi Foreign Language University, School of English.

Her career experience in Finance Management, Chief Accountant and Credit Manager was gained at The Crowne Plaza Hanoi, the Moevenpick Hotel Hanoi, The Sheraton Hotel Group and The Melia Hotel in Hanoi.

She has a VAS convert to IFRS Report Certificate from the Vietsourcing Training Center and is also a CPA member.  She speaks Vietnamese (native) and is fluent in English.

Paul Alan Wood

Famous British Executive Chef – Paul Alan Wood, with over 45 years of experience working in international hospitality groups in France, Germany, Netherlands, Greek, etc., one of the restaurant belongs to Shangri-la (Chinese) is proudly receive famous Michelin star. In Vietnam, he used to be the Executive Chef of luxury international hotels such as Daewoo, Melia, Grand Plaza, Indochine Palace. Chef Paul Alan Wood was former Senior Culinary Arts Lecturer of CHM International Institute.

Joanne Borrett

Joanne is from Melbourne, Australia, where she studied an Associate Diploma in Tourism & Hospitality Management at William Angliss Institute and further into her career completed a Certificate IV Workplace Train the Trainer. With some 20 years of work experience in the Hospitality and Tourism industries, Joanne has worked in numerous boutique style restaurants in Melbourne, was on the Food & Beverage team at Coconut Beach Resort in The Daintree Rainforest of Queensland’s north, spent time working in the tourist mecca town of Port Douglas, ran her own restaurant in Williamstown, Melbourne for one year and then shifted her focus to the travel industry where she looked after clients’ travel arrangements at Croydon Travel, San Michelle Travel, The Brazilian Travel Centre and Kumuka Worldwide.

She has travelled extensively, for business and pleasure, throughout Australia, The Pacific Islands, Indonesia, Malaysia, Thailand, Cambodia, Vietnam, Singapore, Europe and The Middle East and USA. Her recent career opportunities took her to the continent of Africa where she lived and worked in Cape Town, South Africa for 3 years, as the Business Development Manager for Kumuka Worldwide. In Africa she visited numerous countries, including Tanzania, where her proudest moment was reaching the summit of Mt Kilimanjaro. She was former Hospitality Management Lecturer of CHM International Institute.

Willem Bult

Mr. Willem Bult from the Netherlands has 22 years of experience in the hospitality, tourism and hotel business.
His native language is Dutch and he is also fluent in English and Spanish, with a solid grasp of German & Italian. Educated in the Netherlands, he has a degree from MAVO in Administration and Accountancy as well as Hotel & Tourism from MHS.
For more than 20 years Willem has been travelling, working and studying around the globe. His experience spans across 2-star to 5 star hotels and resorts, from leisure, business and famous VIP guests, as well as sporting and events organization on an international level, entertainment organization and performance, exhibitions and Cruise liners.
Devoted to his continual personal development, his accolades also include courses and seminars in Business administration and marketing, Environmental teacher, Hotel director, HACCP, Quality Control Hotel ISO, Psychology for managers, Total Quality ISO and Tourism and innovation. He was former Hospitality Management Lecturer of CHM International Institute.

Kai Marcus Schröter

Kai, a German national, earned a Master of Tourism and Hospitality Management from University of Toulouse, a Bachelor from Hotel Management School Berlin and additional qualifications in tourism management from renowned Cornell University, School of Hotel Administration. He is a certified Trainer-of-Trainers with the Chamber of Industry and Commerce in Berlin and attended Advanced Certification in Training and Assessment (ACTA) with SDH Institute Singapore. He speaks German (mother tongue), English (fluent), Vietnamese (advanced), French (intermediate) and Spanish (elementary).

With more than 22 years in hospitality and tourism management, his international experience includes working in Germany, the US, UK and China. He has held managerial positions with international hotel brands such as the InterContinental, Crowne Plaza and Holiday Inn. Kai has been based in Vietnam since 1998, where he has taken on roles as general manager and other senior executive positions, developing various hotels, resorts and tourism enterprises into benchmark leaders in their respective markets. He was former Hospitality Management Lecturer of CHM International Institute.

Alasdair McLean

Alasdair has an MA degree in English from the University of Edinburgh and is an SQA-accredited TEFL teacher.
He has taught English to non-native speakers both in his home country of Scotland and here in Vietnam, and has worked extensively in tourism, customer service and health care with clients of all ages and nationalities.
Alasdair brings this wealth of experience to CHM, where he greatly enjoys helping people enrich their lives and further their careers by improving their knowledge of the English language. He was former Hospitality Management Lecturer of CHM International Institute.

David Vanhove

David began his career in 1992 at Raynier et Marchetti as a contract caterer. In 1995, he was off to DisneyLand Paris where he began his training as a manager, experiencing all aspects of hotel restaurant management including kitchen, bar, housekeeping, and supplier negotiations. In July 2000, David made his way to the United States, working at the Ritz Carlton in Pennsylvania as a Food and Beverage Manager, focused on providing 5 star service in the restaurant, lounge bar, and cigar bar.

After a series of managerial positions that took him from New York to Las Vegas, he would land in Shanghai China in 2011, where he would lead a team of 40 people at Shangri-La Hotels and Resorts as the Assistant Director of Food and Beverage. Finally, in 2013, David found himself in Hanoi, Vietnam in his current position as the Executive Assistant Manager at Moevenpick Hotel and Resort. He was former Hospitality Management Lecturer in CHM International Institute.

Aaron John Horwath

Born and raised in Portland, Oregon in the United States, Aaron graduated with honors from the University of Portland, recently ranked by U.S. News and Report as the 8th best college in the western United States, with a Bachelor in Education and second major in English. He has spent thousands of hours in diverse classrooms helping both native English speakers and ESL students develop their English literacy. In 2014 he spent the year as a full-time secondary English teacher, teaching and supporting over 120 students across four classes.

Aaron received University of Portland’s Presidential Merit Scholarship all four years of his college career before graduating with honors.  In 2014, he was asked to be a guest speaker at the Northwest National Teachers of English Conference in which he spoke to veteran teachers about his success using kinesthetic teaching methods in the classroom. In addition to his teaching, Aaron was the #2 recruit out of the state of Oregon for men’s tennis in 2010 and spent four years on the University of Portland Men’s Tennis Team, a nationally ranked program in the United States. He was former Hospitality Management Lecturer in CHM International Institute.
